Tilisma Winery (Mukuzani, Kakheti) is part of Georgia’s new wave of natural winemakers—deeply rooted in tradition, but refreshingly precise in style. The project began in 2012, when owners Ketevan Akolashvili and Christian Hubert planted vines in Kakheti; what started as a few plots evolved into a 12-hectare estate shaped by family heritage and a clear, modern philosophy: low intervention and environmentally friendly viticulture.
The heart of Tilisma is its qvevri (clay vessels buried underground), a Kakhetian method prized for natural temperature stability and layered texture. Their cellar works with around 40 qvevri (from small to large formats, including older vessels and newer ones installed for the modern marani), alongside stainless steel, glass demijohns, semi-carbonic fermentations, and méthode ancestrale pét-nats—each technique chosen to highlight a different side of the grape and the Mukuzani terroir.
In the vineyards, Tilisma farms organically, keeps yields low, and hand-picks fruit—then takes a “nothing to hide” approach in the winery: no added sulfites or other inputs, and no filtration or fining, so the wines speak clearly of variety and place. Expect everything from structured qvevri reds and amber wines to bright, crunchy carbonic styles and elegant, natural bubbles.
