About Iago's Wine

Iago Bitarishvili is a legend in the world of Georgian natural wine. From his 2-hectare vineyard in Chardakhi (Kartli region), he produces some of the most sought-after wines in Georgia, working exclusively with Chinuri, an indigenous grape variety.

Founded in 2003, Iago's Wine became Georgia's first Bio-certified winery in 2005, pioneering organic viticulture in the country. All wines are made in traditional qvevri using wild yeasts, whole-cluster fermentation, and zero additives.

International acclaim:

With only 10,000 bottles produced annually and 100% exported, Iago's wines are rare and highly collectible.

One of the most beautiful amber wines you'll ever taste.

Iago's Chinuri Amber is his signature wine , and for good reason. Fermented and aged for 6 months on skins and stems in qvevri, this wine glows with a deep golden-amber color and extraordinary complexity.

Tasting notes:

Dried apricots, honeycomb, chamomile tea, orange peel, toasted almonds, and a hint of dried herbs. The palate is rich yet elegant, with fine tannins, vibrant acidity, and a long, mineral finish that seems to go on forever.

This is qvevri winemaking at its finest, where time, terroir, and tradition come together in the glass.

Winemaking:

  • 100% Chinuri from 60-year-old vines
  • Whole-cluster fermentation in qvevri
  • 6 months of skin contact (maceration)
  • Wild yeast fermentation
  • No sulfites added, unfined, unfiltered
  • Aged in qvevri for 6 months

1. Aged Comté or Gruyère with Walnuts

The nutty, caramelized notes in aged hard cheeses mirror the wine's toasted almond and honeycomb character. Add walnuts for textural contrast. The wine's tannins cut through the richness beautifully.

2. Roasted Cauliflower with Tahini and Pomegranate

The wine's earthy, herbal notes complement roasted vegetables perfectly. Tahini adds creaminess that the wine's acidity balances, while pomegranate seeds echo the wine's bright fruit notes.

3. Grilled Sea Bass with Saffron and Fennel

Amber wines work exceptionally well with meaty fish. The wine's structure stands up to grilled fish, while its aromatics (citrus, herbs, florals) complement saffron and fennel beautifully. A classic Georgian pairing.
